Detailed description:

n the Apennines there are many metati, small two-storey buildings with a single small window used for the drying of chestnuts and isolated from the other living quarters and stables to avoid the risk of fire. The chestnuts were placed inside a series of grilles made from fine beams fixed to the ceiling, and the precious fruit was exposed to the heat of the fire for around twenty days. Once drying was complete the chestnuts were cleaned, selected on the basis of size and quality, and taken to the mill where they were ground to make flour, a food which has nourished the people of the mountains for centuries.
